I’m a big fan of roasted vegetables. Stir fries have their place, but steaming and boiling often result in bland flavor. And maybe I’m a weirdo, but there is something pretty sexy about a properly roasted vegetable.

Roasting veggies makes them divine!

The dry heat from the oven caramelizes the sugars and gives roasted vegetables a sweet and nutty flavor. Not to mention those delicious crunchy and crispy edges that mimic fried food without all the hassle.

If you aren’t a huge fan of vegetables, or have some little ones running around that are a bit picky, I urge you give roasting a try.

I’ve been wanting to add a few more easy, quick and colorful recipes to our weeknight rotation, and this simple low carb recipe for crispy roasted red cabbage has become a family favorite!

This easy recipe only has three ingredients. Red cabbage, olive oil and a yummy seasoning called za’atar. I had never heard of this seasoning blend before my sister-in-law gifted me with some. Her family is from Syria and they have the most delicious spice blends!

I just love listening to her pronounce this spice – it sounds so fancy. “Zah-ah-tahr”

I use this spice alot because I really love it! It is really good in salad dressing, or mixed with oil to dip into with some grain free bread.

You can find it most grocery stores, and it’s a blend of sumac, salt, sesame seeds, coriander and hyssop. Some commercial blends will sometimes add flour (ugh!) so just make sure you’re reading the labels. I’ve also found a good quality blend, without any flour or additives HERE.

You can also make this crispy roasted cabbage without it. It’s really delicious with just salt and pepper, too!

Ready to get started? You really don’t even need a recipe to make these crispy roasted cabbage wedges, and there’s lots of room for adjusting the recipe to your own preferences with different herbs and spices. Crispy Roasted Red Cabbage Wedges

This simple low carb recipe has only 3 ingredients! Vegan, keto-friendly, and the stunning purple color makes this a great side dish to serve at parties, too!

Servings 6

Ingredients

  • 1 small head red cabbage
  • olive oil
  • 2 tsp za'atar spice

Instructions

  1. Preheat oven to 400 degrees.

  2. Wash a small head of red cabbage, and using a sharp knife, cut into wedges.

  3. Line a baking sheet with parchment, and place cut cabbage in a single layer.

  4. Drizzle liberally with olive oil and sprinkle on za'atar seasoning. I didn't use salt as most za'atar blends have salt, but feel free to add salt if needed. 

  5. Roast for 20 minutes, and then lightly shake pan. Continue roasting another 25 minutes or until cabbage is crispy. Timing will depend on how small or large you cut the wedges.

Crispy Roasted Red Cabbage In Pictures:

Wash cabbage and slice into wedges

 

Place on a baking sheet lined with parchment paper

Drizzle with olive oil and za’atar spice

Roast at 400 degrees for 40-45 minutes, shaking the pan lightly halfway

    Roasted veggies are the best and pretty much the only way I prepare them. Definitely love roasted cabbage as well but haven’t tried it with purple yet!
