90-Second Keto French Toast

A simple Paleo mug muffin with all the flavors of French toast! This recipe is grain and sugar free.

Ingredients

  • 1 whole egg
  • 1/2 tsp baking powder
  • 1 tbsp coconut flour
  • 1 tbsp almond flour
  • 1 tbsp water
  • 2 tbsp olive oil (or sub melted butter/melted coconut oil)
  • 1/4 tsp vanilla, optional
  • 2 tsp Lakanto monkfruit Golden sugar substitute (or favorite sweetener)
  • 1 tsp ground cinnamon

Optional, for serving

  • butter
  • Keto-friendly maple syrup

Instructions

  1. In a mug, mix together all ingredients, making sure to scrape the sides and bottoms well.

  2. Microwave for 90 seconds. Carefully remove, it will be hot!

  3. You can eat directly from the mug, or invert on a plate. Top with butter and syrup, if desired.
