Blackened Shrimp with Garlic Alfredo Noodles

An easy, lectin-free recipe to enjoy any night. Spicy, blackened shrimp complement the creamy garlic Alfredo noodles.

Ingredients

  • 1/2 lb shrimp
  • 1/2 recipe blackening spice *or substitute 2 tbl store bought blackening spice.
  • 1 tbl avocado oil
  • 1 tbl butter
  • 2 cloves minced garlic
  • 1 cup milk (A2 cow's milk) or cream for a richer sauce
  • 1/3 -1/2 cup grated parmesan cheese
  • 1 package carrot noodles, prepared per package (or sub 12oz noodles of choice)
  • 2 cups arugula - optional, to serve on the side
  • salt, to taste

Instructions

  1. Rinse shrimp, drain, and coat in blackening spice. 

  2. Heat cast iron pan over medium-high heat and add 1 tbl avocado oil. Place seasoned shrimp in a single layer in pan.

  3. Cook for 3-4 minutes and carefully turn shrimp with tongs and continue to cook another 3-4 minutes until shrimp is cooked through and spice is nicely crusted. Set aside.

  4. In a clean pan, add 1 tbl butter and melt over medium-high heat. Add in garlic and lightly stir until garlic is fragrant. Add in 1 cup of milk or cream, and parmesan. Stir slowly until heated through, and cheese thickens sauce. Taste and add salt if needed. (Parmesan can be salty, so taste before adding in any extra salt). 

  5. Add in cooked noodles and stir until well coated.

  6. Serve with blackened shrimp and a side of arugula.
